Easter Nest Cupcakes

Happy Easter! Or not Easter… No one will blame you if you make these any other time of the year, ‘cause let’s be honest, who doesn’t love a good chocolate cupcake covered in chocolate?!?!

Yield: 6 cupcakes

Time: 30 mins

Ingredients

  • 1tbsp butter, softened

  • 2tbsp cocoa

  • 1 ½ cups icing sugar

  • 1 ½ tsp milk

  • Mini eater eggs (I used cadbury’s)

  • 6 of your favourite chocolate cupcakes

Method

  1. Beat the butter, cocoa, icing sugar and milk together. I use a stand mixer with the paddle attachment on medium speed for 5 minutes. You could equally do this by hand but you may not get it quite as fluffy. The icing may look stiff at first but it should relax and become fluffy. If not, you can gradually add a little more milk to get it to the consistency you like. You’re aiming for something that is pipeable but that wen you pipe a blob it hold firm and doesn’t spread.

  2. Put your icing in a piping bag and cut a SMALL hole at the tip. You want it to be just wide enough that it doesn’t take you too much effort to squeeze out the icing, but sill looks delicate.

  3. Pipe around and around in circles on your cupcake. I find it easier to start in the centre, moving in circles outward. Then I can focus on building up around the outside to create the nest, leaving the middle slightly less full so I can nuzzle the eggs in there later.

  4. Decorate your nests with mini Easter eggs and any other decorations that take your fancy.
